The fries I made yesterday were the best fries I’ve ever made. But also only incrementally than the last time. This is what’s nice about not being all that great at something.
Most of them were nice and soft on the inside and crispy on the outside, but there were more soggy ones than I would have liked. I needed better control over the heat on the second frying. The oil got way too hot, then I waited it for it to come down, but I went too far, not accounting for the fact that it’d cool when the fries went back in.
