I am somewhat cutting down on meat, but (yeah, I know), Costco has an incredible price for beef short ribs. It’s roughly 1/3 the price of H Mart’s (1/2 if you don’t factor in Costco’s being boneless and H Mart’s being boneful) and 2/3 the price of McKinnon’s.
Unlike at McKinnon’s you don’t have to (sometimes unsuccessfully) explain how they should be cut. They’re already flank cut, just too thickly. So, I froze them for a few hours, then cut and marinaded them.
I thought I’d cut them in half, but they were thicker than I thought, so I cut them in quarters. This is approximately three family meals’ worth.
The unknown, of course, is the quality of the meat. I have never been able to find organic short ribs, so they’re at par with the rest on that front. I’ll find out about the taste tomorrow.
