Here’s how I get pizza to get into the oven without sticking to the peel. Like I talk about
around the 4:00 mark, I put the pizza on parchment paper and put both the parchment paper and pizza in the oven so that it’s easy to get off the peel. The key, though, is that I let a little bit of the pizza stick directly to the baking steel. That way, when I pull the parchment paper out a minute later so that the pizza cooks directly on the baking steel, a part of the pizza is stuck to the steel, making it easy to pull out the parchment paper.
