Wings from the other day. On a game changing reread of this
recipe, I realized that you put the raw chicken in the Dutch oven at the
same time as the oil and heat them together! So, you don’t have to carefully lower the wings into hot oil and watch out for spatter.
Also, I think I like frying stuff in the Dutch oven in general, deep or no. I greatly appreciate how the high walls catch spatter that you’d otherwise have to clean up.
Basically, I’m against spatter.
