My mother-in-law sent us these amazing steaks! I think it was a matter of pure niceness, rather than of occasion.
The cuts were (American) Wagyu “eye rib” and prime rib cover, which I had never heard of before. I have only once before cooked steak fancier than tritip. It was filet mignon, and I messed it up, so I was concerned here.
They turned out great, though! We planned on eating three steaks’ worth and saving the rest for later, but it turns out that highly marbled steak is extremely filling. We only got through about 2 steaks worth.
I grilled three and sous vided one. The grilled eye rib was slightly better than the sous vide eye rib, but both had amazing texture and flavor. I guess aside from overcooking, you cannot go wrong with insanely expensive steak.
